This stall offers the most striking spectacle of the entire Atarazanas market in Malaga. The owner specializes in big fish because any small ones would just disappear in his huge, miraculously skilful hands. I could spend hours watching the art of cleaning, deboning, skinning the enormous sea basses, soles, seabreams, brills etc. He also seems to enjoy his job a lot as he smiles gently all the time. Needless to say, his stall is very popular and despite the high, but totally fair, prices he sells big volumes. This is truly a unique stall with unique fish of unique size run by a unique owner of unique size as well. The guy obviously knows how to cook and prepare the fish as well as he is always willing to share helpful tips. This is the place for example where I first learned that to make cuts into roasted brill is a nonsense as it only dries out the final dish.
