It was really surprising for me when I first learnt the important role of mushrooms in malagan cuisine. Coming from the mushroom paradise myself where 90% per cent of adults spend their free time in the woods looking for wild mushrooms I was quite happy to see that although not so massively popular, mushrooms still play an interesting role in many of the local inland recipes.
Right the most basic recipe is quite different from the central European ways of cooking mushrooms.
Clean the mushrooms with a clothe and remove all impurities from the surface. Cut into slices or leave entire depending on the size of the mushrooms.
Heat the olive oil in a skillet and saute the mushrooms with sliced garlic (and optionally jamón cut into cubes or 2 cm wide strips) until both the garlic and the mushrooms get nicely brown colour.
